It sounded like a playful novelty track, but every tropical mixologist knows Nilsson accidentally stumbled upon an absolute truth: citrus and coconut are the twin pillars of liquid paradise. One is sharp, electric, and revitalizing; the other is creamy, soothing, and rich. Together, they create an instant cure for mundane days.
For my new drink, Put Lime in the Coconut (Citron & Coco), the mission was simple: take that pop-culture remedy and elevate it into a high-grade, dry, and velvety tropical experience.

The Secret in the Glass: Sri Lanka’s Golden Triangle
Forget artificial piña colada mixes or heavy, cloying canned creams loaded with synthetic emulsifiers. To make this drink truly world-class, the coconut base needed to be clean, aromatic, and flawlessly smooth.
That is why I turned to Les Vergers de Boiron Ambient Coconut Cream.
Boiron strictly sources these coconuts from Sri Lanka’s famous Golden Triangle, a region renowned for produce with sweet, tender flesh and rich natural oils. Their ambient recipe uses 80% fresh coconut flesh and 20% pure coconut water—with zero emulsifiers. With its natural 24% fat content, it delivers a silky, micro-textured body that coats the palate luxuriously while letting the cocktail breathe.
The Spirit: Why Rhum Saint James Agricole?
A drink with this level of creaminess demands a spirit with real agricultural character to slice through the coconut fat and lock arms with fresh lime. Standard molasses-based industrial rum would simply get lost or make the drink overly sweet.

1 oz Saint James Imperial White (55% ABV): Brings an electric, grassy bite and vibrant proof that cuts straight through the richness of the Sri Lankan coconut cream.
1 oz Saint James Royal Ambré (45% ABV): Aged in oak for 18 to 24 months, adding gentle wood, warm vanilla, and subtle spice notes that wrap around the fruit.

A drink this special deserves a home that tells a story before you even take a sip. It is served in a custom, hand-crafted stoneware mug sculpted by the legendary John Mulder of Eekum Bookum Tiki. The tactile, heavy-fire ceramic captures the raw Polynesian aesthetic, crowned with a mountain of flash-blended crushed ice, a fresh mint sprig, and a classic paper umbrella.
The Master Recipe
Put Lime in the Coconut (Citron & Coco)
1 oz (30 ml) Rhum Saint James Imperial White (55% ABV)
1 oz (30 ml) Rhum Saint James Royal Ambré (45% ABV)
1.25 oz (37.5 ml) Les Vergers de Boiron Ambient Coconut Cream
0.75 oz (22.5 ml) Fresh Lime Juice
0.5 oz (15 ml) Dr. Nilsson Syrup (Vanilla-Cinnamon Spice Syrup)
(Optional) 2-3 dashes Aromatic Bitters (to add extra complexity and dry out the finish)
Service Vessel: Custom Eekum Bookum Tiki Mug by John Mulder
Ice: Flash-blended with crushed ice / crowned with fresh crushed ice
Garnish: Slapped fresh mint bouquet, dehydrated lime wheel, classic paper umbrella, and a dusted line of freshly grated nutmeg.
Syrup Specification
Dr. Nilsson Syrup (Rich Vanilla-Cinnamon)
This syrup acts as the essential aromatic bridge: the vanilla rounds out the fatty acids of the coconut cream, while the cinnamon highlights the oak barrel aging of the Saint James Royal Ambré.
Yield: ~750 ml
500 g White Cane Sugar
250 g Water
2 whole Madagascar Vanilla Beans (split and scraped)
3 whole Ceylon Cinnamon Sticks (cracked)
Method:
Combine water, sugar, split vanilla beans, and cracked cinnamon sticks in a saucepan over medium heat.
Stir constantly until the sugar is fully dissolved, do not bring to a boil.
Remove from heat, cover, and let steep at room temperature for 12 to 12 hours.
Strain through a fine-mesh sieve or nut milk bag, bottle, and keep chilled (shelf life: 4 weeks).
