What happens when you take classic Tiki cocktail culture and reimagine it entirely through a Mexican lens? You get El Tikilero, a bold, tropical creation that flips traditional Tiki mixology on its head.

The Alternate History: "What if Tiki was invented in Mexico?"
Back around 2010, during a festival in Los Cabos, I was presented with a creative challenge: What if Tiki culture hadn't originated in 1930s California, but right here in Baja California?
At the time, tropical cocktails were almost universally defined by Caribbean rum. I wanted to prove that 100% agave Tequila Reposado possessed the exact structure, depth, and punch needed to anchor a heavy, fruit-forward build. By pairing aged tequila with vibrant fruit purees, specifically Boiron Pineapple and my signature Dan’s Mix (a cold-processed 1:1 blend of Boiron Passion Fruit and organic blue agave nectar), the recipe landed the ultimate balance of rich agave earthiness and electric tropical acidity.
After its Baja debut, I brought the drink home to Nu Lounge Bar in Bologna, where we dialed in the specs to absolute perfection.
From Local Secret to Global Mainstage
Over the years, El Tikilero took on a life of its own. It traveled across international guest shifts, popped up on menus worldwide (sometimes under dynamic local spin-offs), and made appearances at major global events, from BCB Berlin and SOBEFF (South Beach Wine & Food Festival) to Tomorrowland, the 50 Best Bars gatherings, and the Class Bar Awards.
No matter where in the world it was poured, the drink carried two distinct visual signatures:
The Nu Lounge Skull Mug: A nod to Day of the Dead art, featuring custom ceramic skulls stamped with "EL TIKILERO" across the teeth and the "NU LOUNGE" banner on the back, packed high with crushed ice.
The Cactus Coupe: A sleek, high-contrast presentation using green-stemmed cactus coupe glasses, served over a single hand-carved ice chunk.


The Complete Recipe & Batching Guide
To prepare Dan's Mix, blend 1 part Boiron Passion Fruit puree with 1 part Blue Agave Nectar using a cold-process method (no heat).
Ingredients:
2.5 oz Reposado Tequila
1.5 oz Dan's Mix*
3.0 oz Boiron Pineapple
0.10 oz Mezcal Espadín [For misting or top float]
Freshly Ground Allspice [Dusting on top]
Pour the Reposado Tequila, Dan’s Mix, and Boiron Pineapple into a cocktail shaker filled with ice. Shake vigorously to fully aerate the fruit and agave, creating a thick, dense head of foam.
Strain into your chosen vessel over ice, either a clear ice chunk in a chilled Cactus Coupe (from Libbey) or packed crushed ice in the custom Nu Lounge Skull Mug.
Float a fresh orchid on top, mist the surface with chilled Mezcal Espadín for an immediate smoky nose, and finish with a dusting of freshly ground allspice.
