Today, I was digging back through some of my old recipe files and vintage menus, and the second my eyes landed on the Esotico Rum Cup, a wave of incredible memories came rushing right back. Man, Esotico Miami was such a cool place, it was an absolute hell of a ride! I miss those vibrant nights !!

Esotico wasn't just a masterclass in liquid geometry; the kitchen brought a serious culinary game that matched the complexity of the drinks. It was a full-on tropical feast, serving up slow-cooked Luau Pig roasted in banana leaves, coconut fried rice (the legendary Hawaii Five-0) loaded with shrimp and crab meat, and even an adventurous Octopus Hot Dog served on brioche with a mezcal relish.
But the absolute peak of the experience for true insiders? The secret door right by the bathrooms. If you knew who to ask, that door opened up into Kaona, a hidden sister speakeasy. While Esotico brought the high-energy, vibrant South Beach tropical luxury, Kaona was a deep-dive tiki paradise, intimate, mysterious, and dialed up to an absolute ten.

We are talking live surf rock bands, burlesque shows, hula dancers, and occasionally an Elvis Presley impersonator making the room shake while groups shared massive, flaming large-format cocktail bowls like the Giant Shell or the Pirate's Treasure Chest. It was loud, it was theatrical, and it was full rock 'n' roll from the front door to the back alley.

The Recipe: Esotico Rum Cup
The true engine of this cocktail is Dan’s Mix #9, a signature spiced almond syrup that anchors the drink's rich, adventurous profile with a nutty, fiery complexity.
Ingredients:
2 oz Moderately aged Jamaican rum (or a rich Demerara rum works beautifully)
1 oz Dan’s Mix #9 (recipe below)
0.5 oz Fresh Lime Juice
2 dashes Alamea Pimento Liqueur (Allspice Dram)
2 dashes Angostura Bitters (for the top)
Garnish: Fresh mint sprigs
Method
Combine the aged rum, Dan’s Mix #9, fresh lime juice, and pimento dram into a shaker.
Add a generous amount of crushed ice.
Shake vigorously for exactly 5 seconds to achieve the perfect chill and aeration without over-diluting.
Pour the entire contents, completely unstrained, into a double old-fashioned glass.
Dash the Angostura bitters directly onto the top of the ice and garnish generously with slapped fresh mint sprigs.

To experience this sophisticated refresher properly, you must first construct its legendary, multi-layered sweetener. It is a process of precise steps, moving from a fiery ginger base to a velvet-smooth almond emulsion.
1.Prep the Rich Simple Syrup:
Gently heat 1000 ml of granulated sugar with 500 ml of water until fully dissolved. Let it cool completely. This creates a dense 2:1 rich syrup base.
2.Blend the Ginger Base:.
Pour 900 ml of your prepared Rich Simple Syrup into a blender and add 250 g of fresh, peeled ginger. Blend at high speed for 20 seconds. Stop, let it settle briefly, and blend for another 20 seconds to completely process the root.
3.Strain and Bottle:.
Press the mixture through a fine-mesh sieve to remove all fibrous solids. Bottle the fiery liquid. This yields roughly 1 liter of house ginger syrup. Store in the refrigerator.
4.Emulsify the Final Mix:
In a clean blender, combine 350 ml of your fresh Ginger Syrup, 350 g of high-quality almond paste, 150 ml of standard simple syrup (1:1), and 50 ml of Alamea Pimento Liqueur.
5.Smooth and Store:R.
Blend all ingredients on high until the texture is completely uniform, glossy, and smooth. Pour into a clean bottle and keep refrigerated.
